Pea & Ham Soup

Soup is such an easy lunchtime meal when I am at work. I have a lot of Sweet Potato & Carrot soup, but to change it up I wanted to try making a different soup. I have lately been making Pea & Ham soup it is so easy to make, completely gluten, dairy & onion free and so tasty. Also, peas are said to give relief to ulcer pains in the stomach because they help 'use up' stomach acids. Perfect for us Crohnies!!


You will need ...
  • 500g Frozen Peas
  • 1 medium sized potato (peeled & diced)
  • A ham stock Knorr cube (completely gluten & lactose free)
  • 400ml - 500ml boiling water (enough to cover vegetables)
  • Ham slices
This will make enough for four portions, so what I do is divide up and stick in the freezer. Then when I fancy some I can get it out and defrost.

  • To start, chop and peel the potato and place in a sauce pan
  • Boil the water in the kettle, then pour into a jug and add Knorr cube
  • Stir cube until fully dissolved then pour over potato
  • Turn on hob and start on high heat
  • Gently stir, and leave for around 10 minutes until the potato has softened
  • Add in the frozen peas
  • Once the pan is bubbling, turn to a lower heat and let simmer
  • Leave for around 10 minutes and check vegetables with a knife to see if they have softened enough
  • Once softened, remove from heat and let cool
  • When cool enough to handle, pour the ingredients into a blender. I use a Nutribullet but this isn't essential, any blender will work to soften into a soup like mix
  • The blending stage should only take 30-60 seconds
  • Once blended to a consistency of your likening, pour into a bowl
  • To serve, add sliced ham cut up and a crunch pepper on top
